Collection: Olio Novello

For another year, we're thrilled to offer a limited run of Novello olive oil—Italy's celebration of the new harvest season. Novello (Italian for "new") is the first pressing of freshly picked green olives, and this year we have two exceptional bottles that just landed in the US.

What makes Novello so special?
This is olive oil at its most alive. Pressed within hours of harvest and bottled unfiltered, Novello captures the vibrant, grassy intensity of the season's first harvest. It's thick, cloudy, super green and bursting with peppery flavor—with double the polyphenols of typical EVOO.

Novello is meant to be enjoyed NOW. Once these bottles sell out, that's it until next harvest.

This year we're featuring Novello from several of our favorite Italian producers, all are unfiltered, just-pressed, and flown in fresh via air freight to ensure quality.

Use them generously: drizzled over warm vegetables, swirled into soups, or simply dipped with crusty bread. This is oil that demands to be the star.
