Grilled Vegetable and Sole

This dinner idea features a jar of Mixed Grilled Vegetables in Olive Oil. Each jar is packed with colorful carrots, peppers, eggplant and zucchini from Puglia. The mix is topped off with olive oil and ready to be used with fish, cheese or a simple baguette.
INGREDIENTS
Sole fillets
- 1 jar Mixed Grilled Vegetables in Olive Oil
- Piranske Soline Sea Salt, to taste
- Orange Zest, to taste
DIRECTIONS
- Poach the sole in the mixed vegetables and olive oil.
- Once cooked, season with sea salt and a grating of orange zest.
